“Peanut Butter Cup” Banana Bread French Toast

This isn’t your regular french toast. A slice of “Elvis-Style” Banana Bread is used as the base. It’s topped with a generous amount of homemade strawberry jam and whipped cream.

Banana Bread:

  • 4 Cups Flour
  • 2 Cups Mini Peanutbutter Cups
  • 2 Cups Over Ripened Bananas
  • 2 Teaspoons Baking Powder
  • 1 TableSpoon Salt
  • 3/4 Cup Dark Brown Sugar
  • 4 Farm Fresh Eggs
  • 4 Tablespoons Buttermilk
  • 1/2 cup of unsalted butter

Preheat oven to 350 degrees

Combine all (Except the mini peanut butter cups) in a stand up mixer until batter is incorporated. Once all items are incorporated fold in peanut butter cups. You want these left out until the end so they don’t break into pieces, the objective you’re shooting for is to have whole pieces in there.
Once its incorporated, using a rubber spatula scrape into two greased bread pans, you can use lard, butter, non stick spray (with flour). You want to make sure you coat the entire pan so you don’t leave your bread in the pan.

Once this is done tap the pans on the counter to make the bread batter settle down and knock any air bubbles that might be in the batter, out.

Set in the middle of the oven for 1 hour. At the 30 minute mark rotate the pans in the oven so that everything is browning equally. At the 55 minute mark take your cake tester and place all throughout the to make sure it comes out clean (remember there is banana in here so make sure you don’t hit a piece of banana)
it should be a nice golden brown color.

Let cool completely before trying to remove so you don’t leave any in the pan.

Fresh Whipped Cream:

  • 1 Cup of Heavy Whipping Cream
  • 1/4 Cup of Granulated Sugar
  • 2 teaspoons of Vanilla extract

Whip in Standup mixer or hand mixer until it has stiff peaks (pull whisks away and if it looks like mountains you’re good!)

Strawberry Jam:

  • 1 Carton of strawberries (test a berry to tell how sweet it is)
  • 1/4 cup of Apple Cider Vinegar
  • 1/4 cup of water
  • 1/2 Granulated Sugar

Quarter Strawberries and take green tops off. Add all ingredients to a non stick skillet and let cook on low-medium heat. You still want liquid in this, should have the consistency of syrup.
