How to make your own Bacon-Fat Corn Tortillas for Tacos or Tostadas.

This is my favorite way to do tortillas. These tortillas can be used for anything, snacks, tacos, Huevos Rancheros, Fajitas, etc. The possibilities are endless.

  • ​​3 Cups Masa 
  • 1 ½ cup warm water
  • 3 Tablespoons bacon fat (you can also use lard, fat makes a more tender tortilla)
  • 1 teaspoon of salt

Incorporate all ingredients in a bowl and mix to form soft dough. If its to dry add more water and adjust seasoning.

Roll into a 1.5 oz ball and put into the tortilla press. Make sure you use wax paper so that it doesn’t stick to the tortilla press.

When taking the tortillas off of the wax paper, lay the tortilla in your hand with the wax paper facing up, then with your free hand gently peel away the wax paper. Don’t use your fingers to pinch at the tortilla. Gently start to lay the tortilla in the pan. The goal is to not use you fingers to move the tortilla from your hand to the pan, if that happens you run the risk of tearing the tortilla.

Fry in a dry medium heat pan (preferably cast iron) for 30 seconds, each side, you will start to see some char marks, that’s what you’re looking for! One they are done place tortillas in a towel to help steam the rest of the way through.

If you don’t have rendered down bacon fat (the grease leftover from the frying of bacon) you can use a few different things, however I urge you to use bacon fat. You can use lard, crisco, Manteca (which is down most Spanish isles in your everyday grocery stores) or use Vegetable or Canola oil. I prefer to use bacon fat, because bacon!
